Cayman Style Beef Recipe

Cayman-style beef is a traditional dish from the Cayman Islands consisting of extremely tender shreds of beef combined with onions, garlic, scotch Bonnet peppers, seasoning peppers, salt, and pepper. The beef should ideally be freshly slaughtered, and before the preparation, it’s recommended to allow it to sit covered in the refrigerator.


The beef is slowly-cooked for a few hours in order to soak up the flavorful juices. Also known as stewed beef, the dish is especially popular during holidays such as Christmas.

Serves 8 – 10

Ingredients

  • 5 lbs Fresh Cayman Beef (Pieces of every cut including portions with fat or use USDA Bottom Roast).
  • 1 or 2 Medium White Onions, diced
  • 3 Cloves of Garlic, diced
  • 2 stalks of Scallion, finely chopped
  • 1/2 or 1 Scotch Bonnet Peppers (to taste) 1 green or orange in color
  • 1 Tbsp Black Pepper
  • 1½ Tbsp Salt
  • Seasoning Peppers (to taste)

 

Preparation & Cooking

Trim portions of fat from lean meat and set aside. Season beef with salt, pepper,  chopped garlic. Add in diced seasoning peppers to taste. Place fat portions in a large heavy pot on medium heat until rendered. Place the seasoned 2-3 inch beef cubes in a pot and reduce heat to a low simmer. Place whole scotch bonnet pepper over meat and also add your onion and scallion. Cover with a tightly sealed lid, and simmer on low for 3 to 4 hours depending on tenderness desired. Check every hour and give a stir and add water if looking dry and the last hour take a fork and start to separate the beef  or you can shred if thats how you desire. Remove whole peppers carefully after cooking or when shredding to prevent bursting.

Serve with fried ripe plantain, Boiled Cassava or Breadfruit, Potato Salad, or Pumpkin, Sweet Potato, Rice and beans or White rice, and your choice or fresh-cut vegetables.
